I don't plan ahead very far so I will give you what I did this weekend....

Friday
Dinner: Tacos (made a double batch of the meat mixture and saved half for Saturday. Soaked oatmeal for the morning.)

Saturday
Breakfast: [Soaked] Oatmeal. Served with lot's of butter, and some maple syrup
Lunch: Taquitos (added sauteed onions and green chilli's to the taco meat; put a small amount in a corn tortilla with cheese, roll up tight, and fry 'til crisp) Served with lettuce and sour cream.
Dinner: We went out to eat.

Sunday
Breakfast: Shredded Wheat Cereal
Lunch: Leftovers from restaurant for some and tuna salad for others.
Dinner: Chili (I made a huge batch of chili without beans, then took some and added tomatoes and beans for dinner that night, I saved the rest for making Chili Cheese Fries and Chili Mac this week)

And this morning I made "Greggs" (scrambled eggs and grits, mixed together) and bacon. I cooked the entire pack of bacon* and will use the extra for Bacon Cheeseburger Rice tonight.

Here's what I have planned but it could change if the baby decides to come a bit early.  Cheesy

Monday - French toast with peaches
Tuesday - turkey pot pie
Wednesday - burritos with homemade tortillas
Thursday - Pecos Pasta (chili, corn, cheese, and pasta)
Friday - potato soup
Saturday - something with meat, I usually wait on this to see what dh is in the mood for

I usually only plan the main dish and then side veggies are whatever we are in the mood for or have on hand.

$ is really tight here right now, so I have to go off of what I have (it has been interesting here lately). The only thing we have in abundance (but it is running out) is meat. We have venison and pork. Dh went grocery shopping yesterday and bought one or two items we needed to make a meal. I have stuff for:

Homemade pizza
Chili (probably 3 days worth)
Venison chops, mashed potatoes, gravy
Pork chops, hash browns
Venison steak, french fries
Ham and who knows what (saving for when company comes)
ground venison (lbs and lbs of it) to be used as hamburgers, in spaghetti, tacos, or wahtever.

I will pcik from whatever on this list all week. I think chili is on the menu today IF I remember in time today. Sometimes I forget, in which case it will be hamburgers tonight. CJ

  Whiterock, i noticed you ate Shredded Wheat for sunday breakfast. Is that the big "bales" and if so, how do you it eat? That's the kids and dh's favorite cereal with peanut butter and honey and of course, lots of raw milk.  We pretty much save it for sunday breakfasts. I grew up eating it with hot milk, melted butter and salt and pepper.

If we can find it, we get the organic mini-wheats that are either frosted or are sweetened with brown sugar and just eat it with cold raw milk. But if we get the unsweetened we use honey. We tried it with hot milk once but didn't really like it. We all like that little crunchiness it has cold, I guess.

MONDAY - shepherd's pie
TUESDAY - chicken wild rice soup
WEDNESDAY - mexican lasagna
THURSDAY - either calzones or pizza (home made)
FRIDAY - steaks on the grill
SATURDAY - leftovers
SUNDAY - sunday night is always "snackie dinner" which means many different things

Wednesday-BBQ pork,rice,broccoli
Thursday-BLT's, coleslaw
Friday-Papa Murphy's Pizza and Ceasar Salad
Saturday-Bean and Cheese Burritos and Mexican Rice
Sunday-???

I'm trying to use up what I have and this is what I came up with. We almost always get Papa Murphy's pizza on Friday night.

Oh sure, I'm happy to give you the recipe Smiley  I pretty much just eyeball it.

~Vegetable Cheddar Chowder~

2-3 cups diced potatoes
1-2 carrots diced or sliced
1-2 celery sticks diced or sliced
1 small onion diced
1 cup corn
1/4 cup (or half stick) butter
1/4 cup flour
2 1/2 cups milk
1 cup cheese
Salt & pepper
Parsley

Combine all vegetables in large cooking pot, fill with water until all the vegetables are covered.
boil on high until vegetables are tender(around 15 min.)
Meanwhile, in a small saucepan melt butter, once melted, add flour, and mix together.
Slowly add the milk. Once thickened add cheese.
Once the vegetables are done, drain all but about 2 cups of water.
Add the milk mixture to the vegetables, stir. Add salt, pepper and basil to taste.

Thats it! It's pretty easy to make.
If it seems too thick you can add a little more milk or water at the end.
Or you can add more cheese if you want it more cheesy.
And sometimes I add some cut up chicken, steak or ham if we're in the mood for some meat.

OK, since it is Friday I can tell you what our menu turned out to be:

Monday: Chili with crackers and cheese
Tuesdays: Chili with cheese
Wednesday: Venison Burgers with cheese melted on top, hashbrowns, the last of the cheese, pickles
Thursday: Venison burgers (no more cheese), hashbrowns, baked beans
Friday: Homemade pizza (dh had a shoveling job and was able to go buy cheese) with pepperoni, scrambled venison, olives, green pepper and onions....MMMM, MMMM I ma getting hungry for it already and it is only 2:20 PM!

It's not as fancy as it sounds, but it's really easy to make.

~Glazed pineapple chicken & rice~

1 cup brown rice
2 1/2 cups water
1 T olive oil
2-3 chicken breasts, cut up into bite size pieces(raw)
1/2 cup brown sugar
1 T cornstarch
1 can crushed pineapple
2 T soy sauce
1/4 cup apple cider vinegar
Cheese

Bring water, rice and olive oil to a boil. Turn down to medium heat, cover and cook for 35 min.
(or follow your own rice directions on package)
In a big sauce pan, cook chicken. Next ,add the brown sugar and cornstarch, mix all together until brown sugar is melted.
Then add the pineapple, soy sauce and apple cider vinegar.
Once rice is done, mix that in with the pineapple mixture. Sprinkle cheese on top, cover and let the cheese melt
on low heat. And then serve Smiley

(Don't let the list of ingredients fool you -- it's SO easy to make.   Wink)

Cowboy Nacho Casserole

1 lb ground beef
about 1  1/2 cups fresh salsa  (I use Chachi's mild but any salsa will do)
1 large can refried beans
1 can creamed corn
1 can diced green chilies
1 can black beans
1 cup shredded cheddar cheese
2 cups tortilla chips
Sour cream
sliced green onions (optional)
2 tsps chili powder
1/2 tsp granulated garlic
1/2 tsp onion powder

Preheat oven to 350 degrees.
Brown ground beef; add all seasonings and salsa; stir to combine.
In a greased 13 x 9 x 2  glass casserole, layer the ingredients evenly across bottom of pan in this order:
1st)   refried beans
2nd) broken tortilla chips
3rd) creamed corn
4th) black beans
5th)  green chilies
6th) meat mixture
7th) top with cheese and green onion

Bake uncovered for 30 minutes and serve with sour cream.

Do you coat your fries in any oil before baking?  I always just cut the potatoes and toss in a bit of EVOO before baking.  Do I need to do that if I soak them first?

1.  Preheat oven to 450 F; spray baking sheet with nonstick spray (or use parchment paper)
2.  In a large bowl, combine the potatoes, 1/4 tsp of the salt and sugar with cold water to cover.  Soak 15 minutes; drain and blot dry (very important!)
3.  In another large bowl, toss the potatoes with the oil and paprika.  Place in a single layer on the baking sheet.  Bake, turning the potatoes over as they brown (I've forgotten this step before and they still turned out amazing) until cooked through and crisp, about 45 minutes.   Sprinkle with sea salt while still warm

The whole key is the soaking and blotting dry.  That's what makes these fries rival restaurant fries.  They're crispy instead of soggy.
Yum.

Dh loves cooked breakfast, but we can't make it happen on weekday mornings, so I thought it would bless him to have "breakfast" for dinner a few nights this week.  He is salivating already!  My kids love it, too.

Thurs:  Confetti casserole (also from WTM)
Fri:  Chalupas  (what can I say, I was in a rut... also from WTM)
Sat:  Spaghetti with salad
Sun:  Baked chicken with broccoli and couscous sides

Tues- Beef Stew, brown rice
Wed- Chick Nuggets (from Decetpively Delicious) with toast and lima beans
Thurs- Linguine with Clam Sauce and Salad
Fri- Beef Tacos

I'm terrible at cooking on the weekends.

Thursday--Pork chops
Friday--dunno yet, we'll see what  happens as this is my 8yods's 9th birthday! We may celebrate on this day or on Saturday....
