I typed up a restraunt style menu of all our favorite dishes, and I use that to help jog my memory when making up the weekly menu.  I put the recipes in catagories: Salads, soups, Mexican Food, Italian Dishes, Special Side Dishes, etc.  Hubby loves to browse the menu when I make out our weekly meal plan.  I printed the menu and put it into a leftover 'pad-folio' (pleather folio for holding a notepad), so it looks like a fancy restraunt menu.  I saved the file as family menu, so I can go back in and update.  I recently added a summer menu page and a winter menu, as I cook lots of soups and stews in the wintertime.

Another thing that really helps: When I print out a recipe from the internet that I want to try, I put it into a 'try me' folder.  Then I leave one night a week to try a new recipe.  If we like it, it goes into the rotation and into my cookbook-notebook.  If we don't care for it, I just throw the recipe away. Wink

My Menu:
Monday: Lasagna-this was pre-prepped on Friday, and baked fresh tonight...see my note at the bottom of the page.
Tuesday: Grilled Chicken with squash and brocolli

Wednesday: Leftovers
Thursday: Seven Layer Nachos
Friday: Baked Chicken
Bonuses (if I have time): Oatmeal Cranberry Orange Scones, Wheat Bread, Blackberry Pie

I have just started pre-prepping two additional meals on Friday for Saturday and Sunday, which keep the weekend free for enjoying family time, and it also gives me a good leftover boost at the beginning of the week!

Thought I'd revive this since school is starting for us next week. My mind is on getting organized.

Monday-Rosemary Grilled Thighs, Garlic Spinach and Two Cheese Grits(this is in the current Southern Living)

Tuesday-Corn Chowder,Chop Chop Salad,corn muffins

Wednesday-Parmesan Chicken,Whole Wheat Spaghetti,Ceasar Salad

Thursday-Salmon Patties,Almond Rice Pilaf, Asparagus

Friday-Pizza

Saturday-Grilled Burgers,Baked Beans and Fruit Salad

Sunday-??

I eat a salad with all these meals but don't always serve one to family.

Wednesday - tortillas with leftover chicken, other fillings

Thursday - leftover beef soup with popovers or biscuits

Friday - Tuna Casserole

Thank you ma'am. Um I need that creamy bacon chicken recipe. I was just going to allrecipes to type in chicken breast, bacon, half n half and cheese to see what I get!! Sounds like I could make your recipe work. Grin

Hey Leslie!

I'll be posting this recipe (along with pictures) on my blog soon, but I'll give  you a sneak peek!

I'll do mine in a crock-pot, but you could put your chicken,  some butter and olive oil (keeps butter from burning),  in a dutch oven. When about half done, add chopped bacon and a chopped onion and cook on low till chicken and bacon are done. Next, add about a half-cup of chicken broth to the pan to get the yummy parts off the bottom. Then add about a tablespoon of cornstarch to 2 tablespoons of water and add to the pan, along with about 1/2 cup of cream. Cook till thick.

You could do cheese, too, of course. And I personally would add some thin strips of red bell pepper.

I didn't post this menu, but I make pumpkin pancakes for my family.  We make whole wheat pancakes and use fresh pumpkin that I have cooked and frozen in small portions, but any pancake recipe would work.  I have also used other fruits and fruit puree in pancakes, like applesauce, different berries, etc.   You just mix your dry ingredients together, then add the mashed pumpkin along with the egg, oil, and butter.  You may need to adjust the amount of milk that you use to get the consistency you want.     *also, I add p. pie spice to the dry ingredients instead of vanilla for flavor*

I make a double recipe of pancakes for my family and use a cup of pumpkin.  We just make them to our taste, the recipes for pancakes have room for flexibility, imo.

Here's the full recipe:   Wink


Oven "Fries"

1 1/4 pounds potatoes, peeled and cut into 1/2 inch strips
3/4 teaspoon salt
1/2 teaspoon sugar
4 tsp oil
1 tsp paprika

1.  Preheat oven to 450 F; spray baking sheet with nonstick spray (or use parchment paper)
2.  In a large bowl, combine the potatoes, 1/4 tsp of the salt and sugar with cold water to cover.  Soak 15 minutes; drain and blot dry (very important!)
3.  In another large bowl, toss the potatoes with the oil and paprika.  Place in a single layer on the baking sheet.  Bake, turning the potatoes over as they brown (I've forgotten this step before and they still turned out amazing) until cooked through and crisp, about 45 minutes.   Sprinkle with sea salt while still warm

The whole key is the soaking and blotting dry.  That's what makes these fries rival restaurant fries.  They're crispy instead of soggy.
Yum.

Ok I made these tonight according to the recipe and although they tasted great, they didn't come out crispy. I'm not sure what I did wrong lol. I was thinking it might have something to do with too much oil? I used olive oil in the same proportions as the recipe called for...I'm wondering if I should try it next time without oil? Just pat the fries dry, add spices and bake in a 450 oven. What do yall think?
