I was given a whole bunch of shriveled ginger. I'd like some ideas as to what to do/preserve the good stuff.

Peel, slice, and dry it.

Freeze it.

Grate it small and cover with apple cider vinegar. 

Any of these methods would work well for ginger, depending on how you want to use it later.  I prefer to freeze fresh ginger whole in a ziploc-type bag and grate what I need as I need it.

This might not be exactly what you are looking for but if you or a loved one is running a fever, you can take a lukewarm bath with some of the ginger sprinkled in it.   My 4yo dd runs REALLY high fevers for extended periods of time, and this has brought her fever down 2-3 points within 10-15 minutes.  I keep ginger on hand just for that purpose.

Well . . . I use ginger for a lot of things; culinary and medicinal.   Sometime if I have fresh ginger I grate it with a cheese grater or grind it up in a food processor and cover it with acv to preserve it.  Then it can later be added to cooking or to a tincture.  kwim? 

For instance, scoop out a teaspoon or so to add to the chicken marinade.
