Making breakfast biggest meal of day

Hey. So my dh is laid off work after 32 years with this company and he's gonna probably be around more often. Plus, he and I both could afford to lose about 50 pounds, a piece! So, I am wanting to get your thoughts, ideas, opinions, suggestions, info, and wisdom regarding making breakfast the largest meal of the day, then lunch and then having a very light dinner.
so, Talk to me, tell me what you think and how this might work. Dh is very much a big meat and potatoes kind of guy, but he'll eat anything I put in front of him, even if he doesn't like it.

Well this is how I have eaten for years. Big breakfast, light lunch (sometimes no lunch which I know is probably wrong) and light dinner. One thing I notice is most people don't eat this way...Alot of people I work with come in starving with no breakfast and then go raid the vending machines at lunchtime...If we're celebrating an office birthday and someone brings a cake, forget it...
Usually for breakfast I'll have sausage (turkey only) and biscuits, or a bagel and cream cheese, or scones and jam or pancakes (my favorite) and sausage...And sometimes if I'm feeling ambitious we'll have eggs or bacon. And one cup of coffee. I'm getting hungry just writing this lol. Then half a sandwich for lunch and maybe a small hamburger or bowl of cereal or pasta or for dinner. (I know my diet isn't the
best
so mostly I'm just showing an example of making breakfast the biggest meal...not necessarily the healthiest meal. One thing I'm short on, always, is vegetables so I'm looking for ways to incorporate more of them...) I love to cook but since there's just one of me here at the moment I'll lots of times cook something and freeze it in little individual-size servings to reheat later for a light dinner.
I did seem to gain weight when I was eating the other way (small breakfast) and a big dinner. Now I sleep better and instead of dreading the alarm clock I actually enjoy getting up early because by then I'm hungry and looking forward to breakfast! lol

I also prefer a big breakfast and a light lunch and dinner.
Here's what we eat usually eat for breakfast: Range free eggs scrambled with ground beef, and various diced veggies (whatever I have) and topped with melted cheese. Along with this I either serve refried black beans or hash browns. We also have some kind of fruit if possible... usually a cantaloupe. And, if we can afford it, we have juice with Green Food Feast mixed in.
(For lunch and dinner we often have black beans again in the form of burritos, tostadas, taco salad, with rice... Black beans are very antioxidant and are recommended for weight loss.)
Another breakfast we often eat is only for the peculiar: Sardine sandwiches. LOL. On toast with homemade mustard, lettuce, onion, and cheese. Also with fruit.
We also eat Breakfast 'Changa's: Eggs, meat, veggies, and cheese rolled in a tortilla (burrito style) and browned crisp in a skillet with olive oil.
I find that all of us (the kids especially) are clearer thinking, healthier, and don't get as hungry during the rest of the day when we start out with lots of proteins and no sugar. If we eat sugar (like ice cream) I schedule it as a snack around 3 in the afternoon when we are all beginning to get tired and need a boost...
My DH sometimes skips breakfast in order to get to work early. He comes home for lunch. I notice that on those days he is hungry before he goes to bed and then usually eats something high carb as a snack before bed. LOL. Consequently, he also could stand to lose some pounds. I need to start making him a take-to-work breakfast that he can pick up on his way out the door... hmmm.

See, that really helps me...I really was having a hard time actually trying to figure out how to make this work. I talked to dh this morning a little bout it and we may also just have 'supper' for breakfast, like barbecue, fried taters, veggies, etc....instead of trying to make it the traditional "breakfast" menu type foods.
I appreciate all your input...I can't tell you how much it helps to have these suggestions coming to my email inbox (love that notification option).

We sorta do this in our family but only on weekends.
Our breakfasts are huge and eaten about 9-10am then we go all day without food until about 4 when we have a small dinner. The kids are use to this and know that there is no more food until dinner on these days and are great about it even my 2yo. But again we only do this on the weekend when Dh is home. I supose though if he were always home we would eat this way. We love it!
Breakfasts are always breakfast foods for us. Usually eggs, a meat, tortillas or biscuits, cheese, avacado and juice. My Grandmother, who is from mexico, always says that in the morning we should eat as a king, in the afternoon a queen and in the evening a little prince/princess. I think I am translating it correctly......my spanish is rusty.LOL

First I want to say I'm sorry your husband got laid off.
My husband is around alot too.
We do like Monita alot of the time. Mostly on weekends but he only works T-W-Th so M and Friday we do it too. Late big breakfast and then early dinner. Sometimes they will have a snack of nuts or fruit or something less healthy if it is aroudn.

Yeah, why not? Just use the food you have. And if you wanna stay "traditional," almost any kind of meat, veggie or leftover non breakfast-y food can be fried up with some eggs and rolled up in a tortilla for a breakfast burrito.

We have a fitness book that recommends eating the largest meal at breakfast to help with health and weight loss. Apparently food doesn't digest as well in the evening as your body slows down to get ready for sleep. We did this for a couple years, and we would eat typical dinner food at breakfast time, and then eggs and toast for dinner. It saved time in the evenings too. This would probably work well with crockpot meals since you can let them cook overnight.

mmm...steak and eggs, breakfast potatoes, sausage burrittos, bacon/egg/cheese sandwiches, homemade bead sliced thick with jam, waffles with fruit topping, pancakes with cream chipped beef, scrapple, cornmeal mush, buscuits and gravy, cheesy grits and fish with greens, sweet rolls, homemade granola, fruit, yogurt, smoothies...mmmm, I can think of a TON of big breakfast meals! We love breakfast so much we usually have breakfast for dinner several times a month! Casseroles are good for breakfast, too! And quiche/egg pie! Meatloaf sandwiches are good, too!
Also, I like to eat dinner leftovers for breakfast--but if breakfast was your big meal, you could just eat breakfast leftovers for lunch! Handy!

I've been toying with different breakfast foods for breakfast after reading this thread. Since my boys are early risers, they now prepare their own breakfast of yogurt and fruit. For me, I think I've found my new favorite breakfast. I'll preface this by saying it isn't for everyone, especially if you don't prefer fish. For my taste buds, however, this REALLY hits the spot.
BREAKFAST EGGS & SARDINES
I place a can of sardines packed in olive oil into my cast iron pan & heat with some chopped onions & peppers. I whisk about 3 eggs (organic free range) and add to the pan when the onions are looking clear. Sea salt & Pepper to taste and then top with cheese. This makes enough for two servings (which covers me as the little ones gather and ask for a 'taste' *wink*).
Using the cast iron in combo with the healthy oils/fats & quality ingredients (I think) makes for a VERY satisfying breakfast without feeling like you've eaten a ton of lead . . .
Another new favorite breakfast food around here is one I found in one of James A. Duke's books (

© 1997 -- not the herbal handbook).
This is my own version based upon his recipe:
BRAN MUFFINS
Preheat oven to 475°
Crush 2 oz bran flakes (read labels carefully or you'll just get a bunch of sugar and HF corn syrup) & mix with 1/4 cup walnut pieces, 1/4 cup sunflower seeds, 1/4 cup dried cherries, & 1/4 cup dried blueberries or cranberries (He uses raisins). Set aside.
Note: The flakes are measured by weight
In another bowl blend:
1 cup unbleached all-purpose whole wheat flour
2/3 cup rolled oats (I've used them whole and ground. Works well both ways)
1/2 cup stone-ground cornmeal (looking for a substitute for this, but haven't found one yet)
1/2 cup honey (I use a little less than a full 1/2 cup, but you may want the full 1/2 cup)
1 1/2 tbsp cinnamon
2 tsp baking powder
3/4 tsp baking soda
1/2 tsp sea salt
Puree in food processor:
chopped apple or pear
1 large egg
3 tbsp sesame oil (cold pressed, unrefined)
1 cup raw milk
Add the bran flake mixture to the flour mixture and stir until well mixed. Fold the fruit puree from the food processor into the other ingredients. Fill lined muffin cups with the mixture and sprinkle the top with sesame seeds.
Place into the oven and reduce the temperature to 375°
Bake 20 - 25 minutes or until lightly browned & firm.
Remove from oven & cool in pan a few minutes before placing on cooling rack.
Store in airtight container or in a bag in the freezer.
Makes 12 muffins
Variations:
use banana or 1 cup applesauce (or another fruit) in place of apple/pear
I've made these without pureeing the apple, just finely chopping & they are okay, but I think the texture is nicer when I puree the fresh fruit.
These are VERY tasty & satisfying! I've served them to guests that LOVE them.
I like to keep them on hand so that the kids can have one with their yogurt/fruit & gives Duke something to take with him to work & have with this coffee. They like it so well, I'm not telling them its healthy. *wink*

I have never had sardines before, but this recipe just sounds really good all around. Are they anything like anchovies?

Hmmmm . . . . Anchovies taste MUCH different to me . . .
The sardines & eggs (to me) taste a lot like salmon patties (without the breading).
Of course, Duke thinks my tastes are rather odd

Our family recently discovered sardines.
DH will take a can, dump in bowl, stir in a bit of sour cream, squirt of mustard and salt and pepper. For himself, he'll add cayenne. Mash with a fork and spread on saltine crackers. The boys can't get enough.
I'll have to fix them with the eggs, peppers and onion SC! DH would love that.
